Solar Plexus Power Bowl: Golden Lentil & Turmeric Stew

This stew is grounding, anti-inflammatory, and packed with gut-friendly fiber and plant-based protein. It stimulates digestive fire and supports your Manipura chakra's core themes: willpower, confidence, and vitality.

Ingredients (Serves 2–3)

  • 1 cup red lentils (rinsed)
  • 1 yellow bell pepper, chopped
  • 1 cup chopped yellow squash or zucchini
  • 1 small carrot, diced
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  • 1 clove garlic, minced
  • 1 tsp grated fresh ginger
  • Juice of 1 lemon
  • 1 tbsp olive oil or ghee
  • 3 cups low-sodium vegetable broth or water
  • Salt to taste
  • Optional: fresh parsley or pumpkin seeds to garnish


Instructions:

  1. In a large pot, heat olive oil or ghee.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Add the bell pepper, squash, carrot, turmeric, cumin, black pepper, and a pinch of salt. Sauté for 2–3 minutes.
  4. Stir in red lentils and broth. Bring to a boil, then reduce to simmer.
  5. Simmer uncovered for 20–25 minutes, or until lentils are soft and stew is thick.
  6. Stir in lemon juice before serving.
  7. Garnish with pumpkin seeds or herbs and enjoy mindfully.
