Solar Plexus Power Bowl: Golden Lentil & Turmeric Stew

Ingredients (Serves 2–3)
- 1 cup red lentils (rinsed)
- 1 yellow bell pepper, chopped
- 1 cup chopped yellow squash or zucchini
- 1 small carrot, diced
- 1 tsp turmeric
- 1/2 tsp cumin
- 1/4 tsp black pepper
- 1 clove garlic, minced
- 1 tsp grated fresh ginger
- Juice of 1 lemon
- 1 tbsp olive oil or ghee
- 3 cups low-sodium vegetable broth or water
- Salt to taste
- Optional: fresh parsley or pumpkin seeds to garnish
Instructions:
- In a large pot, heat olive oil or ghee.
- Add garlic and ginger, sauté for 1 minute.
- Add the bell pepper, squash, carrot, turmeric, cumin, black pepper, and a pinch of salt. Sauté for 2–3 minutes.
- Stir in red lentils and broth. Bring to a boil, then reduce to simmer.
- Simmer uncovered for 20–25 minutes, or until lentils are soft and stew is thick.
- Stir in lemon juice before serving.
- Garnish with pumpkin seeds or herbs and enjoy mindfully.
